Here is a recipe that we love at our house for chicken enchiladas
3 oz of cream cheese softened.
Mix with 1/2 cup of sauteed onions
and in 1 table spoon of green chillies
1/4 tea spoon of cumin
Stir in 2 cups of cooked chicken
Place mixture into flour tortillas*
I try to use wheat. You know you got to get healthy somewhere.
For topping mix remaining can of chilies (4 oz can)
1 cup of sour cream and 1 can of mushroom soup. Pour on top of tortillas.
Cook 375 for 20 minutes covered
Then place 1/2 cup grated cheese on top and cook 5 min or until cheese is melted.
Yummy Right?!?!?!
*Do not use cinnamon sugar tortillas that look like wheat tortillas. It's not good at all. In any way shape or form!

Sounds wonderful, but I have to ask... Did you actually use the cinnamon sugar tortillas without realizing it? What a shock that must have been to your tastebuds! :)

YUP! It did NOT taste good at all!!!!
We plan on making this for dinner tomorrow night and when we were at the grocery store buying the ingredients, we discovered just how easy it is to make the "cinnamon sugar" mistake! I picked up a packet of tortillas thinking they were wheat and, sure enough, they were the cinnamon sugar tortillas! Thanks for making us aware of that potential pitfall so we could avoid it.
Just thinking about the looks on your faces when you took that first bite makes me crack up...I bet John tried to be real nice about it, but sometimes you just can't hide it when something doesn't taste good! --Matt
